You know, it's funny but a lot of the stills that are out there aren't even in the movie. They are merely photos taken for publicity purposes, I guess.
I think that's pretty common. Think how many publicity shots from LOTR differed a bit from the finished product. And scenes that get cut out still make it into both trailers and publicity shots.
A lot of publicity shots are taken by the on-set stills photographer. They just click away as filming is happening. That's why the photograph will often be from a different angle even when the scene still makes it into the final cut of the film or like you say, it will be a photo from a scene that doesn't make the final cut.
